{"id":1611,"date":"2018-10-31T00:43:13","date_gmt":"2018-10-30T23:43:13","guid":{"rendered":"https:\/\/www.fontecesia.it\/?p=1611"},"modified":"2018-10-31T00:43:13","modified_gmt":"2018-10-30T23:43:13","slug":"truffle-umbria","status":"publish","type":"post","link":"https:\/\/www.fontecesia.it\/en\/enogastronomy-umbria\/truffle-umbria\/","title":{"rendered":"White or black: truffles in Umbria"},"content":{"rendered":"<p>One of the many reasons for visiting Umbria also undoubtedly includes the region&#8217;s impressive culinary heritage, and one of the finest local delicacies is certainly the <strong>truffle<\/strong>, which comes in many varieties.<\/p>\n<p>Overall there are approximately 10 regional varieties, from the <strong>black or Norcia truffle<\/strong>, to the <strong>white truffle<\/strong>, and even the <strong>summer black truffle<\/strong>.<\/p>\n<p>Let&#8217;s have a look at Umbrian truffles, at least the best-known varieties.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>BLACK TRUFFLE OF NORCIA<\/strong><\/h2>\n<p>The black truffle, or the truffle of Norcia, is certainly the best known and is plentiful in Umbria.<\/p>\n<p>It is in season from November to March and is particularly common in the <strong>Valnerina<\/strong> area, but also in the hills of <strong>Trevi<\/strong> and <strong>Mount Subasio<\/strong>.<\/p>\n<p>They measure between two and eight centimetres. The outer layer is black and rough, while the pulp ranges from black to purple with very fine white veins.<\/p>\n<p>It is highly appreciated in the kitchen for its intense fragrance and its highly unique and unmistakeable flavour.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>WHITE TRUFFLE OF UMBRIA<\/strong><\/h2>\n<p>The white truffle of Umbria is also particularly fine and rarer than the black variety.<\/p>\n<p>It is harvested from October to December or January and grows in the <strong>Upper Tiber Valley<\/strong> and in the areas of <strong>Gubbio<\/strong> and <strong>Orvieto<\/strong>.<\/p>\n<p>It can even grow quite big, the colour of the outer layer ranges from white to yellow. The inside is more of a nut colour, with a strong fragrance and equally intense flavour.<\/p>\n<p>To fully enjoy it, it must be used raw, possibly in shavings over the dishes it is enhancing.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>SUMMER BLACK TRUFFLE<\/strong><\/h2>\n<p>Among the varieties of Umbrian truffle, the summer black truffle is considered to be lower quality, yet very common and widely used to flavour <strong>cheeses<\/strong> and <strong>cold cuts<\/strong> or to prepare tasty <strong>sauces<\/strong>.<\/p>\n<p>It is harvested mainly in the summer, but also in the fall.<\/p>\n<p>The outer layer is rough, black with shades of brown, inside it ranges from brown to nut colour with a light shade of very fine veins.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>One of the many reasons for visiting Umbria is the culinary heritage, one of the delicacies is the truffle.
