Starting from\u00a0<strong>Torgiano<\/strong>\u00a0and passing through\u00a0<strong>Cannara,\u00a0Montefalco\u00a0and\u00a0Massa Martana<\/strong>, arriving in\u00a0<strong>Todi<\/strong>, discovering hamlets and enchanting scenery, as well as some of the food and wine that make it worth your while getting to know the green heart of Italy.<\/p>\n<p>&nbsp;<\/p>\n<h2>Torgiano: Rosso Riserva and bruschetta<\/h2>\n<p>Torgiano is one of Umbria\u2019s capitals of good wine: in fact this is where <strong>Torgiano Rosso Riserva<\/strong> is produced, a\u00a0<strong>DOCG<\/strong>\u00a0with a strong and unique character. It is aged at length \u2013 at least three years, according to the rules of production \u2013 this wine has a bright ruby red colour. The nose is winey and delicate, to the palate it is dry, harmonic, good body. It is excellent paired with\u00a0<strong>entr\u00e9es<\/strong>\u00a0or\u00a0<strong>roast meat<\/strong>, aged cheese and <strong>game<\/strong>. To enjoy it, it is perfect with a\u00a0<strong>bruschetta<\/strong>\u00a0prepared with excellent oil produced not only in this zone, but across Umbria.<\/p>\n<p>&nbsp;<\/p>\n<h2>Cannara: red wine and onions<\/h2>\n<p><strong>Cannara rosso\u00a0and Cannara rosso passito<\/strong> are two wines to enjoy on our food and wine itinerary on the discovery of the best delicacies in central Umbria. The \u2018rosso\u2019 (red wine) has a full, pleasantly slightly bitter and tannic taste, with hints of toasted wood when aged. The \u2018<strong>rosso passito<\/strong>\u2019 (sweet red dessert wine) is, on the other hand, sweet, full, round, fruity. In Cannara, in addition to the wine, you mustn\u2019t miss the famous\u00a0<strong>onion<\/strong>: this local delicacy with its unique flavour makes amazing\u00a0<strong>parmigiana<\/strong> and pizza. If you love onions then the Cannara variety is also excellent roasted in the oven or raw, in salad.<\/p>\n<p>&nbsp;<\/p>\n<h2>Montefalco: Sagrantino and a cutting board of the best of Umbria<\/h2>\n<p>Sagrantino di Montefalco is the\u00a0<strong>second Umbrian DOCG<\/strong>: in fact it holds its exclusive ranking in the region along with Torgiano Rosso Riserva mentioned above. This is probably\u00a0the <strong>best known and loved Umbrian wine in the world<\/strong>: ancient and fine, it is produced in two types: dry and passito. It is mandatorily aged for a period of at least 33 months, it has a dry and harmonious flavour and <strong>strong personality<\/strong>: this is why it pairs well with <strong>dishes<\/strong> with equally <strong>strong flavours<\/strong>. You can fully enjoy it paired with, for example, a cutting board of the best assortment of Umbrian charcuterie, cheeses and\u00a0<strong><a href=\"https:\/\/www.fontecesia.it\/wp-admin\/post.php?post=2444&amp;action=edit&amp;lang=en&amp;admin_bar=1\" target=\"_blank\" rel=\"noopener noreferrer\">torta al testo<\/a><\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<h2>Massa Martana: \u201cColli Martani\u201d with truffle tagliatelle<\/h2>\n<p>On the topic of Umbria and its traditional products, we have to include\u00a0<strong>truffles<\/strong>. Therefore, arriving in Massa Martana, the forth leg of our itinerary dedicated to local food and wine, it is time to enjoy a hearty plate of strangozzi or tagliatelle with<a href=\"https:\/\/www.fontecesia.it\/en\/enogastronomy-umbria\/truffle-umbria\/\" target=\"_blank\" rel=\"noopener noreferrer\">\u00a0<strong>truffles<\/strong><\/a>. The recommended pairing is with\u00a0<strong>DOC \u201cColli Martani\u201d<\/strong>, characterised by many different types and therefore you can choose based on preference, but also on the type of truffle.<\/p>\n<p>&nbsp;<\/p>\n<h2>Todi: Grero and wild pigeon \u2018palomba alla ghiotta\u2019<\/h2>\n<p>Todi is where we gloriously conclude our journey through some of the best wines in Umbria.\u00a0In the <a href=\"https:\/\/www.fontecesia.it\/en\/enogastronomy-umbria\/the-wines-of-todi-the-best-to-drink-in-the-city\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>city of Jacopone even the wines represent the fine local products<\/strong><\/a>: in fact here, in addition to\u00a0<strong>DOC Todi<\/strong>\u00a0\u2013 in its red, white, <strong>Grechetto<\/strong>, <strong>Sangiovese<\/strong> and <strong>Merlot<\/strong> varieties \u2013 we produce\u00a0<strong>Grero<\/strong>, an ancient variety of <strong>red grape Grechetto<\/strong> which had almost completely disappeared, but was subject to a long project of research and recovery that led to, in 2011, registering this wine with the <strong>National registry of Grape Varieties<\/strong>.
